Spicy Salmon with Avocado Salsa

Adapted from a recipe on the Cookie Rookie. Meets Paleo and Whole 30 rules.

MyFitnessPal recipe calculation: 430 calories, 27.4g fat, 17.4 carbs, 34 protein.

What’s in it:

  • 2 salmon steaks
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp chilli powder
  • 1 tsp onion powder
  • 1 tbs olive oil
  • 1 tsp salt
  • 1 tsp black pepper

Salsa

  • 1 avocado
  • 1/2 small red onion
  • Juice 2 lime
  • 2 tbs chopped coriander
  • 6 cherry tomatoes

Broccoli Rice

  • 1/2 of a head of broccoli
  • 1 tsp coconut oil

How to make it:

  1. Mix spice together, rub the salmon fillets with olive oil and this seasoning.
  2. Refrigerate for at least 30 minutes.
  3. Pre-heat the grill.
  4. Combine all the ingredients for salsa together in a bowl and chill until ready to use.
  5. Grill salmon until desired doneness (about 5 minutes).
  6. Steam broccoli until soft then mix in coconut oil.
  7. Serve salmon on top of broccoli rice. Top with salsa.
